Okay, where is this intake air temperature sensor? i ordered one and this is the one they sent me.

Well, now my car flashes up these codes p0112 and p0440 and the book that i have says the intake air temperature sensor is built in with the mass air flow sensor which i have replaced twice.

Hi,
That is correct. The two are combined.
The problem is likely in the wiring. Clear the code and try a wiggle test to see if the code resets right away.
Other than that, you need to perform the diagnostics located below. It requires specific VAG tooling to complete. If you look at pic 1 below, it lists the things needed.

Alright, i have another head scratcher for you. when i bought my 1999 Jetta the guy gave me a thermostat and said he just didn't put it in, so i decided to try it. I took off the stuff i needed to get to it and took the old thermostat out , i put the new one in the exact same way it came out, i bought a new overflow reservoir and put that in. now when i fill the reservoir up and start the car a red flashing temperature light starts blinking at me and will keep flashing but the temperature gauge stays at 190. i'm feeling the hoses that go to the radiator and they are hot but it doesn't feel like there is anything in them and the coolant level has not changed.

And now the red temperature light flashes when i turn the car on. the gauge in the car will go up to 190 for a few and then it goes up to 260 and the overflow tank level stays the same level. the radiator hoses are hot but it doesn't feel like anything is going through them.

When it jumps to 260°F, does it happen all at once? If it stays at 190, that's perfect. Do the cooling fans turn on when this happens? Also, you mentioned that the hoses get hot, but it doesn't seem like the coolant is moving through them. Does the heater work? If it does, coolant is flowing.
