I finally fixed the A/C issue.
The engine coolant temperature sensor was bad. The irony is that I replaced this as first part before replacing the A/C compressor and apparently got an OEM defective one. The engine gauge runs on a different sensor so the reading on the gauge was showing good.
The engine wasn't running hot but that bad ECTS was sending my PCM a bad signal telling it that the engine was running at 255 degrees.
Once I replaced the ECTS everything stayed at 190 degrees and A/C worked as supposed to.
