Where do I install a mechanical water temperature gauge at?

My temperature sensor is all out of wack. I want to bypass it and just use a mechanical one, but not sure where to install it at.
I have a 1990 Chevy Scottsdale v8 305 small block, 4x4 .

There should be an open water port plug at the front of the intake manifold, if you upload a pic of that area. I will try to walk you through the installation. Check out the diagrams below and follow the red arrows.
