Truck keeps sputtering when going uphill or when too hot

First let me say we have switched the motor with a 1978 Chevrolet Camaro Z28 motor and it is stroked and turbo. we are having issues with the truck sputtering and just completely turning off, but the electricity stays on. We have replaced the fuel lines which were not good anymore. we have tweaked the idle screw and we have put a new fuel pump in it. it only sputters and goes out when it's going uphill coming off from being a uphill and when the temperature gauge gets to the first line not even the half line the first line.

What kind of carburetor are you using?

Does it act like it is running out of fuel?

Do you have an automatic transmission? If so, does it feel like the transmission or is it the engine?

Quadrajet and yes and the engine.

Okay, I would start with checking the float level in the carburetor to be sure it is set right. Low fuel level will make it run out of fuel while driving.

Also, I assume you checked the fuel filter?

There is an air bubble in the fuel filter.

Okay, then you need to check the line from the tank to the fuel pump and the line to the carburetor. It is drawing air in from somewhere.
