95 olds cutlass temp gauge

95 olds cutlass ciera v6 3.1 104,440, for some reason when i start it it is normal then the temp gauge rises to red after 5 min, and the radiator fan kicks in i have felt the block it is cold and my heat will not work it only blows hot when i floor the car and then goes cold again i was out of coolant and filled it up i have no leaks i can smell a fruit type smell whenever i get in my car i have no air freshners or anything of that sort idk if its the thermastat or something worst ,can u tell me what it is please

Had this exact problem on my 94 oldsmobile cutlass 3.1 ..Replaced everything to find out it is the curved radiator hose right above the waterpump. It got stopped up and kept coolant from circulating properly. Now heat works great no over heating problems, however this did not fix gage,but was told that it was broke because of the situation,and could replace if I wanted. :D
