this car I purchased a few months ago, the last owner said that the clutch disc and through out bearing had just been replaced. the pressure plate looked to be in good shape. they bleed the system and so have I, but it still wants to grind while shifting gears. I have a feeling that one of the three is faulty.

How high is the clutch pedal when gears starts to engage?

Is grinding felt in all gears?

about an inch, in first gear at a stop sometimes bearly creeps while the pedal is pushed down. only really grinds when shifting to reverse.

The hydraulics and pedal travel looks ok.

Try this, before starting engine engage reverse and with clutch pedal depressed start engine. Shift to neutral, do not release clutch pedal, shift to reverse again. If the gears do not grind, the clutch disc should be retracting on the clutch shaft too slowly. While replacing the clutch, the shaft was not cleaned well.
If the gears still crash on subsequent shifting then the clutch disc is not beiing released enough, if not the hydraulics, then would be the pressure plate, unless the dics is defective and has its damper rubber or spring dislodged.
