I had an overheating issue, we have replaced the thermostat, coolant reservoir, upper radiator hose. Doesn't overheat but temp flucuates now and the cooling fan runs a long time after the engine is shut off, which it didn't do before.

Check the coolant temperature sensor and the engine temperature gauge switch if it has one and also if the fan relay is sticking

Is this something I can check or do I have to take it to a repair shop?

Take it to the repair shop-this is not a DIY thing. It's beyond your control.
