2002 S-Type cooling temp erratic.

My 2002 Jaguar S-Type 3.0 temp guage will be normal then suddenly jump to almost hot and then go back to normal. It will do this several times during a 30 min trip.

What is the problem?

Could be a problem with the thermostat, coolant temperature sensor or a temperature switch or the gauge itself.

Also the cooling fans might not be coming On on time.
