gauges say car over heating but does not over heat gauges red line

Just had radiator changed and thermostat change can not get gauge to read normal temperature red lines to 260 head gasket is OK.
Does not over heat gauge said that car Is overheating.
What are we missing?

Have you checked or replaced the temp sensor?
