1972 Ford Maverick stalling problems

I have a 1972 ford maverick and it will stall out at the most random times. When i push on the gas to much with not enough speed. When its rainy out side or about 40 degrees, even when i let it warm up for 5 to 10 minutes. What could be the cause of this. I do not know much about cars, and this is my first one. from your picture it looks as if the engine has been modified. I'd bet the choke isn't hooked up or working. Have amechanic look at this he'll know what i'm talking about. It's a large plate that should close when your engine is cold and the throttle opened a little bit on the front of the carb.
