Engine Cooling problem

Hi, i rebuilt a 1600 ford cross flow engine. Long story short, took it out for a few runs with no problems other than really poor progression of the revs, i figured this could be down to the carbs not set up properly (twin dhla dellorto 40's) or the timing. However, after about 4 miles of running the engine, i saw steam coming from the engine bay. I shut the engine off and it got a lot worse and took about 2 mins to stop steaming. There seemed to be alot of oil ejected from the crank case breather, so i drained the oil after letting it cool for around 45 mins and it was almost water thin. it was still dark brown, but i think i could smell a hint of fuel in the oil. Any ideas what has happened?
