The engine is has a burnt valve and I am wondering if a motor out of a 2005 Tahoe would work.

We always recommend to stay with the same year make and model. However, if it is the same size, chances are you will need to change things like the injectors, sensors. However, the engine itself should work.
Please keep in mind, you must make sure that all the present sensors on the bad engine will go on the new engine. That is key. The intake, exhaust manifolds should work.
