2000 Daewoo Leganza Temperature Guage readings.

I've had this car for the past five years and the level of the temperature gauge was always considerably under the halfway mark no matter how hot or cold it was outside. Last month my head gasket blew so I had that replaced, and ever since then my temperature gauge is now just barely under the halfway mark. I called the mechanic who fixed my car and told him the problem, and he said it's fine with the 100 degree weather as long as it doesn't go about to the 3/4 mark. These past five years I've never had that gauge needle go up to that point no matter how hot it was outside or how much I had the AC on, and now I don't even turn the AC on because if I do for a while then the temperature gauge goes a tiny bit above the halfway mark. What should I do?

Check and test the thermostat and coolant temperature sensor-
