When I accelerate the temperature goes way up and then as soon as I let off the gas the temperature gauge goes down.

Good afternoon.
There is a constant voltage regulator in the dash cluster that most likely is bad. That regulator keeps all the feed voltage at 12 volts. When it fails, the voltage will rise according to charging voltage from the alternator.
It will have to be confirmed but it sounds like that is the issue.
