1998 Chrysler Sebring Filling with anitfreeze

This car has always been next to impossible to fill with antifreeze. I recently replaced all the hoses and, as usual, the cooling system is now impossible to fill. I have tried everything I know. It runs fine for 30 to 45 minutes and more. But when I put the radiator cap oni rapidly overheats in about 5 to 10 minutes (guage shows hot and light comes on). It also cools off very quickly from this point, which is also weird.

I know it could be the water pump, thermostat and / or radiator cap. The strange part is that it does not overheat with the radiator cap off. That makes me think the thermostat and pump are OK

Could be air in the system, radiator clogged if the pump is good and continue to overheat pressure test the cap and cooling system to include a block test.
