1997 Chevy Tahoe Engine chokes when given gas!!!

Hi, my name is Dylan Nunley. And I was wondering what is going wrong with my tahoe! Before, I accidently ran it without oil, but then quickly noticed and put more in. It helped some, but not enough. After I got paid, I then changed my own oil, using Mobil1 Synthetic 0W-30 (Compatible with 5W-30 & 10W-30) and a Fram ToughGaurd Oil Filter. I also replaced the air filter, it badly needed it. It ran the same way for that day, improving the next day. But I noticed when I checked the oil again, it was already starting to turn dark brown (Thinking it has been cleaning all the sludge from not running it without any). I was then cruizing at 80 to work. And then on the way back, it started to do the same thing as before, cutting out as I gave it a lot of gas. But, a year before we had to cut off the catalytic converters, because they we so clogged up. The 02 sensors are still plugged in. But the check engine light comes on often, but then goes away. Sometimes the check engine light will come on blinking, but then go steady as I start to drive it.
