I am definitely losing coolant and we can find no leaks;
the car is running fine, not overheating and getting 19-20 MPG; is it safe to just keep driving it and keeping the coolant level up or am I a blown gasket waiting to happen?

It will eventually blow, the problem is that if it gets into a culinder (coolant) you take a chance of hyro-locking the engine, which will bend rods and other bad things.
