I purchased this truck used and have found that the engine uses about 1 quart motor oil per 3,000 miles. No leaks, no blue smoke, no smelly exhaust.
I cannot find a PCV listing or that it even has one.
How does GM vent these crankcases on the 4.8 and 5.3?
Will this cause damage to my catalytic converter over time?

Hi baconuts. Welcome to the forum. One quart is not excessive and is nothing to worry about. In fact, you will find the markings on the dipstick do not say "add" and "full". They say "min" and "max" to do away with the many complaints about normal oil usage.

To put things in perspective, my old rusty trusty '88 Grand Caravan with 378,000 miles uses a quart to about every 2,000 miles. I've run it so low it doesn't even touch the dipstick. This has happened numerous times while pulling an enclosed trailer that's bigger than the van.

As long as you maintain a regular schedule of oil changes to remove the harmful blow-by byproducts, losing a little oil is nothing out of the ordinary.
