Exhaust Manifold turning red

1994 Chevy S10 Pickup truck..V6, Votec, 4.3. 115,000 miles.
Initially the truck was overheating, which we thought was a result of exhaust needing to be replaced. After exhaust fixed we discovered both exhaust manifolds were cracked and therefore changed.
Spark Plugs/timing chains have been changed. Fuel injection system as well as the fuel pressure gage has also been replaced. Now the truck is not overheating but the exhaust manifold on the drivers side is still glowing red.
Could use a suggestion on what to do next.

Did you replace the cats?

drop the exhaust from the manifold, wire it so it it supported. Run the motor. IF it isn't red, hook it back up and disconnect after the converter on the problem side and run it again. IF red now, replace that cat. if not red, restriction in muffler or resonator if it has one.

Okay, the previous suggestion was to change out the catalytic converter. This was done, and yes it did seem to help the problem. Now it seems we have another problem.
The truck was running rough, so we changed plugs, wires, cap & rotor and coil. Now the truck seems to be running better until the temperature goes up to normal.
Then it starts running rough again, seems to have a miss and also is very sluggish.

Any suggestions?
