Engine Cooling problem
2000 Chevy Express V8 Automatic 62000 miles

My conversion Chevrolet Express 1500 van shuts down and the engine is veru hot. I'm unable to start the car until 3-4 hours later (right now in the Summer). I can only drive the van for few miles and can not turn on the AC or the engine shuts down quicker. Sometimes, when I am driving the engine suddenly shuts down. Also, I have noticed that the oil temperature gauge fluctuates to low when I am driving at constant speed and not too fast (up to 70mph on highway) , and then it moves to high/redzone when I slow down (close to a stop light/sign). The termostat has been replaced with dealer parts. No apparent electrical problems.
