2001 Chevy Cavalier Temp Gage says it is overheating

My 2001 Cavalier is acting up. This morning driving down the road the temp gage started rising first it was at 195 then 220 then it red lined at 260. I pulled over turned the car off. I check the coolant. It was at a normal level. The fan is turning. There are no leaks. I did notice when the car was running as soon as you open the radiator cap the temp would lower for a couple of minutes but then it slowly starts rising. When I started the car again about 15 minutes later the temp had returned to 195. Started driving again and the gage just dropped to 100 and stayed there. What is going on? Is it the thermostat?

No. It had an oil change about 2 months ago. I have 300 miles before it is due for another.

The AC knob stopped working. But that is because the control went bad. But that isn't related to the engine looking like it is trying to overheat.
