2001 Chevy Cavalier Colant leak With engine surge

I have a new coolant Leak nobody in my family can locate the source. The car has yet to overheat just runs a little hotter then normal. Just recently the temp gauge has begun to bounce from 195 to 100 when driving with this drop my car surges. I thought maybe there wasnt enough coolant to keep constant pressure but the radiator was full.

Pressure test the cooling system to find the leak. Change thermostat.

The surging is due to engine going from closed to open loop, which will add fuel to engine.
