Noises problem
1996 Chevy Cavalier 4 cyl Automatic 135000 miles

I have a bad water pump that I put sealant into that has minimized the leak pretty well. Now a month or 2 later, I'm getting a grinding and high pitch noise (similar to what you would hear if your window was cracked just a little). Researcing online I'm 95% sure it is the water pump bearing.

Can I keep driving if I continue to add antifreeze? Or will the bearing eventually just not work anymore? If it stops working, the car overheats?

If you keep abusing your car like that your going to end up buying a motor for it. NEVER but sealer in a cooling system to fix a leak. All you accomplish is plugging everything up. The car needs a water pump. Replace it and flush the system to try to get some of that gunk back out of it. There is no such thing as "Mechanic in a Can"

also, the person who actually put the sealer in it added a lubricant as well. He said it would help cut down on gunking everything up. thoughts?

Nonsense.
Replace the water pump or park the car.
