2000 Chevy Blazer Proper Coolant Temperature?

Had radiator, thermostat and heater core replaced on 2000 Blazer within the last 3 months. Since replacement, after warming up, the temperature gauge is always just below the 12'oclock position indicating 210 degrees. If idling, it moves to 210 exactly and stays there until I start moving again and then goes back to just a little under 210. Is this normal? I'm not towing or carrying heavy loads or running in 4 wheel drive. What is the correct operating/coolant temperature for my Blazer?

That sounds normal, The t-stat is rated at 195 F.
IT opens at 188 and fully open at 206.
The fan probably kicks on around 210. When you move the temp drops as there is a larger volume of air hitting the radiator.
