I am loking at a 2000 DHS and it turns out that they only put 5 quarts of oil in at the last oil change, 1000 miles ago. The owner stated that the oil light never came on, but the crankcase holds 7.5 qts. Will this have caused damage?

it actually holds 8, .5 qt for the oil filter, no it wont cause damage, oil level lite should have been on at 3 qts down

You title as an engine problem. Was that a statement or a question? Do you have an engine problem? If not then the answer to your question would be that it wasn't hurt. This is depending on whether the driver hot rods around or is a gentle giant. In any case, the oil level sensor system must be repaired if it didn't read low. Oil capacity is 7.5 qts. assuming all is well with dipstick flex in the pan. 8 quarts can get you into trouble as you are getting close to thrashing and aerating the oil with the crank counter weights.
