It idles just fine, I can leave it idling and nothing will happen. If I press the gas like a normal situation, whether it's in gear or not, the RPMs will rise maybe 200 and then roughly drop until the car goes into a complete bog. It won't idle regularly again until I shut it off and restart it. If I press the gas very slowly, I can get the RPMs to rise all the way up and if I hold them there, at like 4k, after I let off the gas pedal the RPMs won't return to normal until I turn the car off. If the car is in gear and I try pressing the gas and easing off the clutch like normal it will immediately bog. I cannot get the RPMs to rise again until I turn it off and restart it. I got a junkyard set of fuel injectors and a throttle body just to see if there was any difference but there was not. I just replaced the downstream O2 sensor hoping that was it. It was not. I don't know what it could be any help would be amazing!

Sure, I can help you :) to me it sounds like the engine is going into limp mode, let's run the codes to see which ones are stored so we can go in the right direction to fix it. Here is a guide that will help. I have seen the accelerator positions sensor cause this issue. This guide can help:

https://www.2carpros.com/articles/checking-a-service-engine-soon-or-check-engine-light-on-or-flashing

Here is the location of both the accelerator positions sensor in case a code is present for it.

This guide can help as well:

Check out the images (below). Please upload pictures or videos in your response of any problems so we can see what to help you with. The sensor is basically the gas pedal.
