So, after installing the A/C compressor, it clicks on and blows cold and strong. So, I took it on a highway drive and click the knob over to setting 2 after about five minutes of running the air went from blowing strong to blowing low and now, I'm confused and don't know what to do next. Any idea of what to look into next?

It sounds like the system needs a small amount of refrigerant added because it sounds like the evaporator is icing up and stopping the air flow. Can I ask what the high and low side readings are, please give me the ambient air temperature as well.

The P0537 trouble code in a 2007 Mercury Milan refers to an issue with the Ambient Air Temperature Sensor Circuit. Here is the location of the sensor so you can change it out. Check out the images (below). Please let us know what happens.

Thanks for the video, sorry for the trouble, they can hide the sensor sometimes. It shows the sensor near where you have the wiring harness going to the SRS impact sensor. Check out the images (below). Please let us know how it goes.
