Why is my car jumping?

Most times I take off my car jumps like a kangaroo until I get into third gear

It sounds like the transmission is slipping or the clutch(es) is(are) chattering. With a manual transmission this is usually caused by oil or grease on the pressure plate. With an automatic, it's usually caused by worn clutches.
