are the guides needed on the rear if we leave them off will it be a safety issue? when we replaced the rotors and pads the guides started grinding on the new rotors.

I am assuming what you mean by the guides are the heat shields. Try beding them a little bit to get them off of the rotor as they keep the brakes cool and prevent fading which is a safety issue.
