my work has an early 2000's isuzu NPR box truck. my boss was wondering if adjusting the bolt under the gas pedal would give us anymore top speed.

Hello,
The top speed is limited by the engine computer, governor limited.
It cannot be changed by adjusting the bolt under gas pedal. The limit is there so that the vehicle can be operated safely within that speed, it is not recommended to change the top speed as it is a safety issue.
