I was told by a grease monkey type quick change station that If I wasn't having problems with my auto transmission I shouldn't change the fluid because sometimes the small wear particles help the clutches grab better. I'm skeptical. Could this be true?

I would just change the fluid as per maintance tells you too if you wait to change it untill you have a transmission issue now you have created a bigger problem.Not changing the fluid when your supposed to can damage the transmission.
