2001 Chevrolet Tracker temperatuer

hi i have a 2001 chevrolet tracker when it's hot the temperature rises up to half and the engine stops it takes about 5 to 10 minutes in the engine starts after 5 to 10 minutes, when I use the air conditioner as.but it happens especially when the traffic is hard.I'm cleaning the radiator, I control water pump is ok. I remove the thermostat because it warms the engine faster
