Engine served my family good, but it is wearing out. It started burning a lot of oil (uses all oil from full oil pan in 2 months). As I really enjoy working on cars, I thought of simply replacing the piston rings. Could that solve the problem? Also, I heard about boring the cylinder walls, is that necessary and if yes, what are the drawbacks?

Well its not so easy to answer this. You really won't know what all needs to be done until you have the engine apart to find out how wore out it is. Given the mileage I would either replace it with a low mileage salvage engine or I would do a total rebuild including having the head the rebuilt. But like I said you just won't really know until its apart so you can see the wear.
