how do figure out the gear ratio in the rear end of my 2000 chevy silverado 1500 4x4

The no. of turns the driveshaft makes to turn the wheel 1 full turn

Check for a small metal tag under one of the cover bolts on either axle. Otherwise the ratio is stamped on the outer surface of the ring gear.

Both of these methods will work but I need to expand on the turn counting method. If it has a limited slip differential, just mark the bottom of one of the tires and count the turns of the driveshaft to bring it one revolution. However it it does not have a limited slip, then you have to lock one wheel still and count 2 revolutions of the other wheel to get the same result.
