What led you replace the thermostat? If it was due to overheating, you might have a leaking head gasket. That would explain why you keep getting air from the bleeder. There is a tool I call a "leak sniffer" to check for a head gasket leak. It's a glass cylinder with two chambers partially filled with dark blue liquid. Air is drawn through it from the radiator. The liquid will turn bright yellow if combustion gases are present. That test doesn't always work well on GM engines because of the remote-mounted reservoir with the pressure cap not on the radiator.
