Temperature goes up and down

As i start driving the car the cooling fan comes on and the temperature gauge goes to red and the "STOP" sign appears. After a few seconds the gauge drops back to normal and the fan stops. Then again after 1-2 minutes the same thing happens.
Any advice!!!

There are several components that will cause overheating;



Radiator cap
Thermostat
Leaks in Radiator hoses, coolant, heater and by-pass hoses.
Leaks in radiator or corrosion
Cooling fan(s) not working
Head gasket.



Also, the catalityc converter can clog and cause overheating

Can it be the Electronic Coolant Temperature Sensor or the relays in the Cooling Fan?

It could be any of those things. Your first step should be to measure the actual engine temp with a laser thermometer to find out if it's really getting hot or just getting false temp readings.
