What would make the fans kick on as soon as the car is started? The thermostat and radiator hose have both been changed, the radiator has been flushed, and the car is not losing water but the temperature gauge keeps going up!

You have two separate issues, though they are related.

If your engine temp sensor could be faulty. That would cause your fans to kick in because it's making your computer think the engine is running hot. Also, the computer controls the temp gauge on the dash, and if it thinks the engine is running hot, it will display that.

Since you've done all that work on the cooling system, I'm assuming you had an issue in that system? Were there any trouble codes then? Are there any trouble codes now?

Use a DVOM to check the temp sensor, compare to factory specs. If faulty, replace, then check system for results.
If the sensor is OK, check the wiring/harness/connectors.

Don't forget, if the check engine light is on, have the computer scanned for codes before you proceed with any repairs.
