Car fake over heats and dies when clutch is pushed in

The last couple days when driving on the hwy the car thermostat hits the red, but is not actually over heating, if you get off the hwy and drive in a higher rpm the thermostat drops quickly back to normal temps, it did it again tonight but to add to it when i am coming to a stop and push the clutch in the car dies. can anyone please help...

hows the coolant level? when it goes red does running heater bring it back down?

the coolant levels are fine, running the heater does not bring it down, tried that already, like i stated if you get off the hwy and bring the rpms up it drops like a rock back to normal to quickly to actually be over heating plus there is no smell of anti freez, then on tues 11/15 it not only did the fake over heat it started dieing when you push in the clutch when preparing to come to a stop. Thinking it is a vacuum issue, the car will stay runing if you bring the rpms down slowly, but if they drop fast it dies. It also seems to be intermitted because the car was totally fine all day on thurs 11/16.
